Bake: Oatmeal Banana Bread

Despite trying to get healthy and buying lots of healthy foods, we are still ending up with a lot of waste. Instead of throwing out these foods fresh fruit I decided to research recipes that will  use up all our overripe/ almost completely off foods.

One of the first recipes I came across was this Oatmeal Banana Bread - already in my bookmarked folder.

Taking all of 15 minutes to make and 45 minutes to bake, this didn't take up too much of my Sunday time at all. In fact, the smell made my Sunday all the better.

A less accurate version of the recipe is as follows:

Bash three blackened bananas in a bowl, slop a bit of oil over the top with a whole egg. Then in another bowl mix together a cup and a bit of plain flour, a cup of oats, a spoon each of cinnamon, baking powder and baking soda and eventually mix the wet and dry together. Then whisk up two egg whites to stiff peaks and fold those into the mix too, before throwing it all in the oven for 45 minutes.
